Product Care

How should I store my chocolates?
Our praline and ganache range is best consumed within two weeks and our truffles approximately one week. The chocolates will remain fresh and best retain their delicate flavours and textures if they are kept in a dry atmosphere at a temperature range between 12 – 20 degrees. The chocolate should also be stored away from direct light and any strong aromas.

Can I store chocolate in the refrigerator?
We do not recommend refrigerating your chocolates, however if you have no alternative, keep chocolates in their original packaging, place in an airtight container and wrap completely in plastic film before placing in the refrigerator. Remove from the refrigerator at least two hours before eating, without removing the plastic film, to allow the chocolate to slowly reach room temperature.

Why has my chocolate turned white?
Chocolate turns white when the cocoa butter within the chocolate has separated toward the surface. It is often referred to as ‘chocolate bloom’. There are several causes, most often occurring as a result of warm storage conditions. Despite its appearance, chocolate that has “bloomed” is still safe to eat.

Quality

What is couverture chocolate?
The word couverture describes high quality chocolate that contains a certain amount of extra cocoa butter; between 32% and 39%. Combined with proper tempering of the chocolate, this higher percentage of cocoa butter gives the chocolate a firmer “snap” and a creamier flavour.

Does Koko Black use Fairtrade Certified chocolate?
Currently Koko Black does not use Fairtrade Certified chocolate. Koko Black imports its chocolate blends from Europe. As a small, but growing company, we are aware of our responsibilities in terms of the practices of our suppliers and have conducted due diligence. We are confident of our chosen suppliers’ commitment to fair and sustainable cocoa production.

Please visit the Cocoa page under our Philosophy tab on our website to read more about our plan for the future.

Why is the praline shelf life shorter than chocolate brands?
Unlike mass produced chocolates in the market, Koko Black products are made from the traditional method using only premium cocoa butter rather than vegetable fats and fillers. Because our products are natural, have no preservatives and contain fresh cream and butter, our products have a limited shelf life to ensure optimum freshness.

If you would prefer a product with a longer shelf life, our butter and cream free products such as the Sandpiper rangeour bars and blocks, or the Inclusions range will allow for longer storage.

Nutrition

Does Koko Black have any gluten free products?
Most of our handmade chocolates, blocks and bars are gluten free; however as a precaution we state that all products may contain traces of gluten, due to the environment in which the chocolates are made. Visit the shop to find out which products do and do not contain gluten.

Are any of Koko Black’s products Sugar or Dairy Free?
Our sugar free and dairy products are the Single Origin 100% Dominican Republic chocolate bar. All dark chocolate bars are dairy free and there are three dairy free products in the chocolate cabinet range; Dark Pistachio, Mint and the Orange Segment.

Are any of Koko Black’s products nut free, alcohol free or suitable for vegans?
Yes some products are nut free, alcohol free and suitable for vegans. Please refer to the allergens section on each product page. However we do state that all products may contain traces of nuts because of the environment in which they are produced.

Are Koko Black products Halal Certified?
No, our products are not Halal Certified.
