PRODUCT CARE

How should I store my chocolates?

Our praline and ganache range is best consumed within two weeks and our truffles approximately one week. The chocolates will remain fresh and best retain their delicate flavours and textures if they are kept in a dry atmosphere at a temperature range between 12 – 20 degrees. The chocolate should also be stored away from light and any strong aromas.

Can I store chocolate in the refrigerator?

We do not recommend refrigerating your chocolates, however if you have no alternative, keep chocolates in their packaging, place in an airtight container and wrap completely in plastic film before placing in the refrigerator. Remove from the refrigerator at least two hours before eating, without removing the plastic film, to allow the chocolate to slowly reach room temperature.

Why has my chocolate turned white?

Chocolate turns white when the cocoa butter within the chocolate has separated toward the surface. It is often referred to as ‘chocolate bloom’. There are several causes, most often occurring as a result of warm storage conditions. Despite its appearance, chocolate that has “bloomed” is still safe to eat.

 QUALITY

What is couverture chocolate?

The word couverture describes high quality chocolate that contains a certain amount of extra cocoa butter; between 32% and 39%. Combined with proper tempering of the chocolate, this higher percentage of cocoa butter gives the chocolate a firmer “snap” and a creamier flavour.

Does Koko Black use Fairtrade Certified chocolate?

Currently Koko Black does not use Fairtrade Certified chocolate. Koko Black imports its chocolate blends from Europe. As a small, but growing company, we are aware of our responsibilities in terms of the practices of our suppliers. Having conducted due diligence on them, we are confident of their commitment to fair and sustainable cocoa production. However other than knowing they are some of the most reputable chocolate companies in the world, still we cannot guarantee their products are completely free of the breadth of concerns that exist.

The current situation is a short term reality for Koko Black.  Please visit the ‘Cocoa’ page of our website to read more about our plan for the future.

 SHOP

What is the delivery timeframe to have chocolates delivered to me?

Deliveries are booked on business days Monday to Thursday. Orders with a delivery address to a capital city will usually be delivered in 1 to 5 business days (excluding Perth and Darwin). For regional areas and addresses in Western Australia and the Northern Territory, delivery may take up to 7 business days. No deliveries are shipped on Fridays, in order to ensure that our chocolates are not stored in hot warehouses over the weekend. Koko Black chocolate is shipped to ensure it arrives at the destination in ideal condition. Inside the beautiful outer-parcel box, the chocolates are packed in a polystyrene inner-box with ice packs and bubble wrap.
