The aroma of chocolate is an important component of flavour.
Inhaling primes the tongue for the incoming chocolate and gives you various nuances of the aroma.
Taste
Place the chocolate on the tongue and allow it to arrive at body temperature.
Let it melt. Chew it only to break it into small pieces, so it begins to melt on its own, allowing the cocoa butter in the couverture chocolate to distribute evenly in the mouth.
